The shooter is playing the don't pass and then
establishes the point.  Then he rolls a seven to win
his bet.  Does he give up the dice because he "sevened
out" or does he keep shooting?

Hi Mike

When a point is established it doesnt matter if the shooter is on the do side or the dont side. If the point is made the shooter rolls again, if the shooter throws a seven then the table gets a new shooter.
